Ingredients

For the Crust:

2 cups Biscoff cookie crumbs (about 30 cookies)

½ cup melted butter

¼ cup brown sugar

For the Filling:

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

¾ cup Biscoff cookie butter

1 tsp vanilla extract

3 large eggs

½ cup sour cream

¼ cup heavy cream

1 tsp ground cinnamon (optional)

For the Topping:

½ cup Biscoff cookie butter, melted

¼ cup heavy cream

Extra Biscoff cookies (whole or crushed)

Instructions

1️⃣ Crust:

Preheat oven to 325°F (163°C).

Mix cookie crumbs, butter & sugar.

Press into 9" springform pan.

Bake 10 min. Cool.

2️⃣ Filling:

Beat cream cheese & sugar until smooth.

Add cookie butter, vanilla, eggs (one at a time), sour cream, cream, & cinnamon.

Pour over crust.

3️⃣ Bake:

Wrap pan bottom in foil, place in water bath.

Bake 50–55 min (center slightly jiggly).

Cool in oven 1 hr. Chill 4–6 hrs or overnight.

4️⃣ Topping:

Mix melted cookie butter & cream. Swirl over chilled cheesecake.

Garnish with Biscoff cookies.
