🍗 Chicken Rosemary & Potatoes

A juicy, flavorful one-pan dish that’s easy and comforting!

Ingredients:

4–6 pieces of dark meat chicken (drumsticks or thighs preferred)

4–5 medium potatoes, peeled and cubed

1 small onion, sliced

1 tsp paprika

1 tsp complete seasoning

1 tsp Tony’s Creole seasoning

1 tsp garlic and herb seasoning

Salt (to taste)

2–3 tbsp melted butter

1/4 cup chicken broth

1–2 sprigs of fresh rosemary

1–2 sprigs of fresh thyme (optional)

Instructions:

1. Preheat oven to 400°F (200°C).

2. Season the chicken with paprika, complete seasoning, Tony’s Creole seasoning, and garlic and herb seasoning. Set aside.

3. Prepare the potatoes:

Peel and cube the potatoes.

Season with paprika, salt, garlic and herb seasoning, and complete seasoning.

Toss until well coated.

4. Assemble in baking dish:

Place the seasoned chicken in a 13x9" baking dish.

Arrange the seasoned potatoes around the chicken.

Scatter sliced onions over the top.

5. Prepare broth mix:

Melt the butter and mix it with the chicken broth.

Pour the mixture evenly over the chicken and potatoes.

6. Add herbs:

Place fresh rosemary and thyme sprigs in the center or on top for extra flavor.

7. Bake uncovered at 400°F for 50 minutes to 1 hour, or until the chicken is golden brown and cooked through, and the potatoes are tender.
