Creamy Leek Soup recipe
Ingredients
2 leeks
2 tbsp butter(30 g)
4 cups chicken broth (1 liter)
2 medium potatoes
¾ cup heavy cream (200 ml)
Salt to taste
Croutons (bread cubes toasted in olive oil)
Instructions
1. Prepare the vegetables
Clean the leeks thoroughly and slice them. Peel and dice the potatoes into small cubes.
2. Sauté the leeks
In a large pot, melt 2 tbsp butter (30 g) over medium heat.
Add the sliced leeks and cook for about 10 minutes, until soft and lightly caramelized.
3. Add broth and potatoe
Pour in 4 cups chicken broth (1 liter).
Add the diced potatoes.
Simmer for 15 minutes, or until the potatoes are fully soft.
4. Blend
Use an immersion blender to puree the soup until completely smooth.
5. Add cream
Pour in ¾ cup heavy cream (200 ml) and blend again briefly until fully combined.
6. Simmer
Let the soup cook on low heat for a few more minutes to warm through.
Do not boil after adding cream.
7. Prepare the croutons
In a skillet, toast small bread cubes in a little olive oil over medium heat until golden and crispy.
