Greek Tzatziki style cucumber & arugula salad
Doesn't look that appealing but it's delicious Usually I just do cucumber, yoghurt, dill, garlic and onion powder and salt and pepper to taste. This time I added arugula and some nutritional yeast. Plain yoghurt can be used in so many ways. Enjoy.

Small dish makes it look like a lot more
I have one chicken garlic sausage half a cup of boiled beans and a small handful of peas. Quick and full of protein. If you don't have time to soak and boil beans use a can of red beans or pinto beans. I also bought a large bag of organic frozen peas from Costco.

Fresh open faced burger
This yummy open faced burger. I used a lean spicy burger patty on a white bottom hamburger bread. With thinly sliced tomato, 1 oz of Tillamook medium cheddar and a large iceberg lettuce leaf and a teaspoon of olive oil mayo. A total of 348-360 calories. And for dessert I ate a kiwi. So filling.

Quick Lunch
This is a filling lunch option, easy and quick to assemble. I use about 2 cups of arugula and two hard boild eggs. You can add a third if you want more protein. Then I have a banana as a dessert. And my afternoon snack is going to be protein shake.

Veggie/ Pulled Pork Tenderloin Pesto Sauce.
