The only roasted chicken recipe you need

This is my own recipe and I RARELY stray from it… if you end up making this, you’ll understand why.

I was given a heritage breed dual purpose bird from the neighbors since they had a few too many and not enough freezer space, so I made the most simple but delicious roasted chicken with it.

Chicken

Pepper

Paprika

Garlic and onion powder

Sea salt

Duck fat

Lemon wedges

Fresh rosemary

Baby potatoes

String beans

Whole garlic cloves

Pat dry chicken, stuff cavity with lemon wedges and rosemary tie legs together tight to keep everything inside, coat in duck fat or oil of choice and season. Place chicken in baking dish. Layer strings beans on the bottom around chicken, add potatoes and garlic on top and season. Bake for appropriate time for the size of your chicken on correct temp. When chicken is done set it aside with the veggies and add the drippings to a pan. Make a cornstarch slurry and add in pepper, salt, liquid smoke, lemon from the cavity and fresh rosemary. Let it thicken and come to a gentle simmer for a few minutes.
