The flavor is just incomparable – nutty, salty, and a little bit sharp, which cuts through the richness of the creamy sauce perfectly. For this recipe, I love grating it fresh right over the top, but sometimes I'll also shave off some bigger pieces for a lovely texture contrast. Speaking of parmesan, have you ever thought about what else you can do with it? Beyond just sprinkling it on pasta, I often find myself with the 'foot' or rind of a wedge of parmesan. Don't ever throw that away! It's packed with so much flavor. What I do is toss it into my soup stocks or even use it when I'm making sauces. For example, if you're simmering a tomato sauce, just drop a parmesan rind in there. Let it steep as the sauce cooks, and it'll impart an incredible depth of umami.
