Strawberry Coconut Truffles Recipe!
Ingredients:
One and a half cups unsweetened shredded coconut
One tablespoon almond butter
Two tablespoons sweetened condensed milk
Two to three tablespoons strawberry compote
Extra shredded coconut for coating
Half a cup melted chocolate
Mini paper cups
Strawberry Compote Step:
To make the strawberry compote, wash and hull fresh strawberries, then chop them into small pieces. Add them to a saucepan over low heat and cook slowly, stirring often, until they turn soft and juicy. Add a small squeeze of lime juice if you want a brighter flavor. Once the strawberries cook down into a thick sauce, add one tablespoon of sugar and cook for another one to two minutes. Let it cool completely before using.
