One of our friend’s birthday was yesterday and she requested a Cheesecake with Strawberry “something” so I just took it and ran with it.
I used a basic New York Cheesecake recipe and then made my famous Strawberry Compote to mix in. 🍓
Strawberry Compote:
•4-5 Strawberries washed, cut into fours and soaked in baking soda for 30 minutes, minimum (when you buy from the grocery store they are soaked in chlorine so the baking soda will lull out the toxins)
• Heat 1/2 cup water on medium heat on stove top
•Add strawberries to the water and add 1/2c granulated sugar, stir to combine
•Let boil for 5 minutes then turn burner to low, using a potato masher..mash strawberries and continue to simmer for 10-15 minutes
•Remove from heat and let cool to room temperature, using an immersion blender blend strawberry misture until smooth
•Transfer to heat safe bowl or glass jar
