Fresh Strawberry Cake
Homemade Fresh Strawberry cake!! 🍓 This is a super simple cake to make!
Cake
3 Cups cake flour (360 g)
2 tsp baking powder (10 g)
12 tbsp unsalted soften butter (170g)
1 1/3 Cups White sugar (266g)
3 whole eggs and 1 egg white
1/2 cup Sour cream (125g)
1 tsp Vanilla (4.2g)
3/4 Cup Milk (184g)
Frosting
2 Cups heavy cream (480g)
8oz cream cheese
1/2 Cup white sugar (100g)
1.5 tsp Vanilla (6.3g)
2 pints Strawberries diced
For Cake pre-heat oven to 325 degrees. Cream butter and sugar together, then add one egg at a time, with sour cream, vanilla and milk, mix fully. Add sifted flour, baking powder and salt and combine. pour into a 9x13 making dish and bake 40 minutes.
icing can be made in advance and put in the fridge to chill but do not add it to the cake until it is fully cooled..
Whip heavy cream to stiff peaks then chill while creaming together cream cheese, sugar and vanilla. fold in heavy cream and diced strawberries. Then ice cake and chill for 2 hours before serving. I chilled mine overnight.
