鮨 赫 sushi aka Tokyoでは、蝦夷鮑をじっくり4時間蒸すことで、肝ソースとの相性抜群の濃厚な味わいを実現しています。私も実際に訪れてみて、その完璧な温度と食感に感動しました。普段はなかなか味わえない贅沢な前菜として、旬の食材を活かした蝦夷鮑の雲丹玉素焼きは特におすすめです。 店内はカウンター8席ほどで、明るく清潔感があります。大将とコミュニケーションを楽しみながら、新宿の喧騒を忘れる落ち着いた空間で食事ができる のが魅力的でした。脂ののったトロ握りや墨烏賊、春子鯛の鮨も新鮮で、特に雲丹とキャビアをのせた岩手牛サーロインの握りは忘れられない味でした。 また、ペアリングドリンクも充実しており、フレシネ・コルドン・ネグロなどのスパークリングワインから、獺祭BLUEや菊姫吟醸といった日本酒まで用意されています。料理との相性を考えたドリンク選びも好評で、鮨と酒のハーモニーを心ゆくまで楽しめます。 私の体験から、新宿周辺で贅沢な鮨コースを楽しみたい方にはぜひ訪れてほしいお店です。季節の食材を使ったこだわりの逸品料理や、目の前で炙ってくれる演出など、五感で楽しむ寿司体験ができます。抹茶をたてる体験もできることがあり、食後の甘味として提供される新鮮フルーツとの相性も抜群です。
