私が「鮨 赫（sushi aka Tokyo）」で特に“通いたくなる”と感じたのは、料理の完成度だけじゃなくて、テンポと体験がきれいに設計されているところでした。新宿で大人の鮨を探している人は、同じエリアに「新宿 よねがみ」「新宿 やまけん」など候補も多いと思うのですが、赫は“旬の食材を活かした前菜→温度と食感が完璧な握り→最後の抹茶体験”まで流れが滑らかで、コース全体の満足感が強かったです。 まず前菜は、ズワイガニのあんかけにウニを添えるような「こだわり抜いた最高の逸品料理」が多く、最初から掴まれました。鮑は肝ソースが濃厚で、残ったソースをリゾットにしてくれるのが嬉しいポイント。こういう“余韻を回収してくれる一皿”があると、コースの記憶が一段濃くなります。キンキの煮物も、肝のコクがあって体感として温まる感じが印象的でした。 握りは、カウンター越しに炙って仕上げる場面があって、ライブ感がしっかり。トロの炭炙りや墨烏賊（塩・酢橘）みたいに、香りの立て方が上手で、食感と温度が狙い通りに来る感じがありました。個人的には「おはぎ（トロたく）」が、名前の可愛さ以上に味がちゃんとしていて、〆として記憶に残りやすい一貫でした。 お酒はペアリング前提で組まれているので、飲める人はかなり楽しいと思います。スパークリングから白、純米系、日本酒の辛口まで幅があり、料理の脂や肝系の濃さをうまく流してくれました。逆にあまり飲めない人は、予約時に“弱め”や“ノンアル寄せ”が可能か相談しておくと安心です。 席数はカウンター中心で（体感8席くらい）、空気が明るく清潔。大将との距離が近い分、会話が心地いいと満足度が一気に上がるタイプのお店です。新宿で「寿司合戦」みたいに“とにかく派手さ”を求めるより、丁寧に積み上げた味と体験を落ち着いて楽しみたい日に向いていると思いました。予約は直前だと埋まりやすい印象だったので、予定が決まったら早めが安心です。
