Raspberry Cheesecake Bars with Streusel
Ingredients:
✨Crust
* 1 ½ cups graham cracker crumbs
* 6 tbsp unsalted butter, melted
* 2 tbsp granulated sugar
✨Cheesecake Filling
* 16 oz cream cheese, softened
* ½ cup granulated sugar
* 2 large eggs
* 1 tsp vanilla extract
* ½ cup sour cream
✨Raspberry Layer
* 1 cup fresh raspberries
* 2 tbsp granulated sugar
* 1 tsp lemon juice (optional)
✨Streusel Topping
* ½ cup all-purpose flour
* ⅓ cup brown sugar
* ¼ cup cold unsalted butter, cubed
* ¼ cup graham cracker crumbs
Instructions:
1. Preheat oven to 350°F (175°C). Line an 8×8-inch square baking pan with parchment paper. Mix graham cracker crumbs, melted butter, and sugar. Press the mixture firmly into the bottom of the pan. Bake for 8 minutes, then set aside.
2. Beat cream cheese and sugar until smooth and creamy. Add eggs one at a time, mixing well after each. Mix in vanilla extract and sour cream until fully combined.
3. In a bowl mix raspberries with sugar and lemon juice.Lightly mash a few berries to release some juice.
4. Combine flour, brown sugar, and graham crumbs. Cut in the cold butter with a fork until the mixture becomes crumbly.
5. Pour cheesecake filling over the baked crust. Spoon the raspberry mixture evenly on top of the cheesecake layer. Sprinkle the streusel topping over the raspberries.
6. Bake for 35–40 minutes, until the center is set.
7. Let cool completely, then refrigerate for at least 3 hours before cutting into bars.
