Healthy Blueberry Streusel Greek Yogurt Protein Pancakes 🥞🫐😍
🥞☀️If you’ve had my famous Greek yogurt, protein, pancakes, you were going to LOVE this version!
🙌There are 25 grams of protein per serving. These pancakes are also very macro, friendly and refined sugar-free!
👉Easily make these gluten-free by using gluten-free all purpose flour or oat flour. Both work great!
👉If you are dairy free, you can easily swap out the Greek yogurt for a thick, vegan yogurt that you like!
👩🏻🍳INGREDIENTS:
Pancakes:
¾ cups organic ap flour
30g organic vanilla protein powder
20g grass-fed collagen
1 tsp baking powder
½ tsp cinnamon
¼ tsp salt 🧂
¾ cups plain, nonfat Greek yogurt
1 large organic egg 🥚
½ cup organic unsweetened almond milk 🥛
3/4 cup organic fresh blueberries 🫐
Streusel:
1/4 cup organic ap flour
2 tbsp grass-fed butter 🧈
1/4 cup brown monk fruit
1 tsp cinnamon
👩🏻🍳 INSTRUCTIONS:
1. Combine streusel ingredients and set aside in the fridge.
2. Preheat a griddle/skillet over medium heat.
3. In a large mixing bowl, combine all the dry pancake ingredients and then add in the wet. Mix until well combined. Fold in the blueberries.
4. Form 6 pancakes on your griddle. Top the sides with the batter with half the streusel. Wait 3 minutes, flip the pancakes, and divide the remaining streusel among the other side of the pancakes. Cook 3-4 additional minutes and enjoy!
