Classic Alfajores de Maicena (Argentine Cornstarch Cookies) 🇦🇷

Ingredients:
✨Cookies
* 1 cup (226 g) unsalted butter, softened
* ¾ cup (150 g) granulated sugar
* 3 large egg yolks
* 1 whole egg
* 1 tsp vanilla extract
* Zest of 1 lemon (optional, but traditional)
* 2 cups (240 g) cornstarch (maicena)
* 1 cup (125 g) all-purpose flour
* 1 tsp baking powder
* ¼ tsp baking soda
* Pinch of salt
✨Filling
* 1½ cups (450 g) thick dulce de leche (preferably dulce de leche repostero)
✨For Rolling
* 1 cup sweetened shredded coconut
✨Instructions
1. Prepare the dough:
* In a large bowl, beat the butter and sugar until light and fluffy (3–4 minutes).
* Beat in the egg yolks one at a time, then the whole egg.
* Mix in the vanilla and lemon zest.
2. Add the dry ingredients:
* Whisk together the cornstarch, flour, baking powder, baking soda, and salt.
* Gradually add to the butter mixture until a soft dough forms. Do not overmix.
3. Chill:
* Wrap the dough and refrigerate for 30–60 minutes.
4. Roll and cut:
* Preheat the oven to 350°F (175°C).
* Line baking sheets with parchment paper.
* Roll the dough to ¼ inch (6 mm) thick.
* Cut into 2-inch (5 cm) circles.
5. Bake:
* Bake for 8–10 minutes.
* The cookies should remain pale with just a hint of color on the bottoms.
* Cool completely.
6. Assemble:
* Spread about 1 tablespoon of dulce de leche on the flat side of one cookie.
* Top with another cookie.
* Gently press together.
* Roll the edges in shredded coconut until coated.

* Use thick dulce de leche so it doesn't ooze out.
* Avoid overbaking—the cookies should stay soft and tender.
