Second attempt at homemade Oatmeal Cream Pies, getting closer! The cookies were SO much better this time (ground oats + thinner cookies 🙌🏻), but I still want to tweak the filling a little—Remove the shortening, add more marshmallow fluff, and I think version 3 might be the winner 🤞🏻💛
