Almond Joy Oatmeal Cookies

These Almond Joy Oatmeal Cookies bring back the sweet memories of childhood treats, combining the rich flavors of chocolate, coconut, and almonds in every bite. Perfect for sharing or enjoying with a glass of milk, they’re a delightful twist on a classic favorite!

Ingredients:

- 1 cup unsalted butter, softened

- 1 cup brown sugar, packed

- 1/2 cup granulated sugar

- 2 large eggs

- 1 teaspoon vanilla extract

- 1 1/2 cups all-purpose flour

- 1 teaspoon baking soda

- 1/2 teaspoon salt

- 3 cups rolled oats

- 1 cup sweetened shredded coconut

- 1 cup chocolate chips

- 1/2 cup chopped almonds

Instructions:

1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

2. In a large bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.

3. Beat in the eggs one at a time, then stir in the vanilla extract.

4. In another bowl, whisk together the flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined.

5. Fold in the rolled oats, shredded coconut, chocolate chips, and chopped almonds until evenly distributed.

6. Drop rounded tablespoons of dough onto the prepared baking sheet, spacing them about 2 inches apart.

7. Bake for 10-12 minutes, or until the edges are golden brown. The centers may look slightly underbaked, but they will firm up as they cool.

8. Allow the cookies to cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
