5‑Ingredient 'Cheeseburger' Broccoli Bake
Yield: 4 servings
Ingredients:
1 lb ground beef, 80/20 preferred — fat = flavor + keeps it moist
1 bag, 12 oz, frozen broccoli florets — no need to thaw
4 oz cream cheese, cubed — Philadelphia block, softened
1 cup shredded cheddar cheese — sharp gives more “cheeseburger” flavor
2 Tbsp sugar‑free ketchup — or 1 Tbsp mustard + 1 Tbsp mayo for Big Mac vibes
Seasonings: 1 tsp garlic powder, 1 tsp onion powder, ½ tsp salt, ½ tsp black pepper
Detailed Directions:
Prep oven + dish :
Preheat to 375°F. Lightly grease an 8x8" baking dish with butter or avocado oil spray. A 9x9" works too — bake time drops 3–4 min.
Brown the beef :
Heat a large skillet over medium‑high. Add ground beef. Break it up with a spatula.
Season with garlic powder, onion powder, salt, and pepper while it cooks.
Brown 6–8 min until no pink remains. Drain excess fat thoroughly — otherwise your casserole will be greasy, not gooey.
Make it “cheeseburger” creamy :
Reduce heat to low. Add cubed cream cheese and 2 Tbsp sugar‑free ketchup to the skillet. Stir 2–3 min until cream cheese melts and coats the beef. It’ll look like a thick cheesy meat sauce. Taste and adjust salt if needed.
Add broccoli :
Dump frozen broccoli right into the skillet. Stir to coat with the beef mixture. No need to thaw — it steams in the oven and won’t get mushy. If your florets are huge, break them up a bit.
Assemble + bake :
Pour the whole mixture into your greased baking dish. Spread evenly.
Top with 1 cup shredded cheddar. Spread it to the edges for those crispy brown bits .
Bake uncovered 20–25 min until cheese is melted, bubbly, and golden brown on top. You want those caramelized edges.
Rest before scooping :
Let it sit 5 min after you pull it out. Helps the cheese set so you get that epic cheese pull like your spoon shot, not a soupy mess.
Tips :
Don’t thaw broccoli: Frozen goes straight in. Thawed broccoli releases water and makes it soggy.
80/20 beef is key: Lean beef = dry bake. You drain the grease anyway, but the fat renders into the sauce.
Soften cream cheese: Microwave 15 sec if you forgot to set it out. Lumps won’t melt smooth.
Broil finish: If cheese isn’t brown enough at 25 min, broil 1–2 min. Watch it — goes from golden to burnt fast.
Drain beef well: I mean it. Tilt the pan and spoon off grease. This is the #1 way these bakes get oily.
That ketchup bottle: Serve with extra sugar‑free ketchup or mustard on the side. Makes it taste like a real burger.

Variations:
Bacon Cheeseburger”: Stir ¼ cup cooked, crumbled bacon in with the beef. Top with pickle slices after baking.
Mushroom Swiss”: Swap cheddar for Swiss, add 4 oz sautéed mushrooms, use mustard instead of ketchup.
Double it”: Use 2 lb beef + 2 bags broccoli in a 9x13". Bake 30 min. Freezes great.
