Keto Cheesecake, no cream cheese

Keto Mixed Berry Cheesecake

Ingredients - filling

2 cups of plain Greek yogurt

2/3 cups if powdered sweetener (Swerve)

1 tbsp of vanilla

1/2 tbsp of lemon extract

2 large eggs

Pinch of salt

Crust

2 cups of almond flour

4 tbsp of melted unsalted butter

1 cup of brown sugar substitute (Swerve)

1 tbsp of vanilla

Toppings

1/2 cups of mixed berries

2 tbsp of granulated sweetener

Preheat your oven to 350°

In a bowl, add your almond flour, brown sugar substitute, butter, and vanilla. Mix ingredients well and press together to form your crust in a springform pan lined with parchment paper. Bake for 8-10 minutes.

Mix your filling well and pour on top of the crust. Bake for 40 minutes. With the cheesecake still in the oven, turn off your oven. Leave your cheesecake in the oven for 40 minutes. Take out and let cool before adding toppings.

For topping, warm mixed berries on the stove with granulated sweetener until it thickens. Add topping to cooled cheesecake and place in the fridge overnight.
