After losing 70 pounds the last year or two I’ve gotten off track recently. I’ve maintained the last 8 months and have been eating so much junk food and honestly feeling like crap. I’m going to be posting these to keep me accountable on eating well and taking care of myself.

That's why I'm really pushing myself to get back into a routine of healthy eating, especially when it comes to my lunches and snacks. Finding those perfect, satisfying go-to options makes all the difference! One of my absolute favorite snack combinations that hits the spot every time is cheese cubes and almonds. It’s such a simple pairing but so effective for keeping hunger at bay. The protein from the cheese and the healthy fats from the almonds make it incredibly filling, preventing those afternoon energy crashes. I love experimenting with different types of cheese – sometimes a sharp cheddar, other times a creamy Colby Jack. For almonds, I usually stick to plain roasted ones, but lightly salted works too! The key is portion control; a small handful of almonds and a few cheese cubes are usually enough. It’s perfect for a quick pick-me-up. Another fantastic duo, especially when I crave something a little sweet, is apple slices with cheese cubes. The crispness and natural sweetness of the apple, combined with the savory creaminess of the cheese, is just divine. Honeycrisp or Granny Smith apples are my favorites for this. To keep the apple slices from browning in my snack box, I often dip them briefly in a little lemon juice and water solution. It’s a game-changer for meal prepping snacks! This combo offers fiber, protein, and a lovely balance of flavors. I’ve found that preparing these in advance, perhaps in a snack box or a meal prep container, is crucial for staying consistent. Having a pre-portioned mix of almonds and cheese cubes ready to grab in the fridge makes healthy choices effortless. Sometimes I'll even add a few grapes or some berries to my snack box for extra freshness. It’s all about making it easy on myself when hunger strikes! Beyond snacks, my lunch strategy also revolves around simple, nutritious options. For instance, I adore a good chicken Caesar salad wrap. It’s easy to assemble, packed with protein and greens, and feels like a treat. Another one of my recent discoveries has been packing sweet peppers with cream cheese and everything bagel seasoning on the side – it’s unexpectedly delicious and adds a nice crunch! And for days I want something heartier, a deconstructed taco salad with lean ground turkey, lots of veggies, and a light dressing is a winner. These meals, along with my carefully planned snacks, help me avoid the trap of unhealthy takeouts. Staying accountable means always having good options available. I try to listen to my body and what it truly needs. If I’m feeling peckish, I reach for my pre-made cheese cubes, almonds, or apple slices snack.
