✔️ 2 1/4 cups all-purpose flour

✔️ 1 1/2 tsp baking powder

✔️ 1 tsp baking soda

✔️ 1 tsp ground cinnamon

✔️ 1/4 tsp ginger

✔️ 1/2 tsp salt

✔️ 1/4 tsp nutmeg

✔️ 2 1/2 cups grated carrots

✔️ 1 cup pecans (optional)

✔️ 1 cup golden raisins (optional)

Cream Cheese Frosting:

✔️ 16 oz cream cheese

✔️ 3/4 cup butter

✔️ 2 tsp vanilla

✔️ 4-5 cups powdered sugar

How to Make It:

1️⃣ Mix wet ingredients: eggs, sugars, oil, buttermilk, vanilla & pineapple.

2️⃣ Mix dry ingredients in a separate bowl.

3️⃣ Combine, then fold in carrots, pecans & raisins.

4️⃣ Bake in 3 greased 8” pans at 350°F for 25-30 min.

5️⃣ Make frosting: Beat cream cheese, butter, vanilla & sugar.

6️⃣ Assemble cake & chill for 30 min before serving.
