* 2 tbsp olive oil
* 2 celery ribs, diced

* 5 tbsp butter
* 1/3 cup flour
* 6 cups chicken broth
* 2 tsp chicken bouillon paste
* 1/4 tsp each: thyme, sage, rosemary
* Salt & pepper to taste
* 1½ lbs chicken breasts or thighs
* 12 oz can evaporated milk (or 6 oz cream + 6 oz milk)
