🍁 Cozy Autumn Wild Rice Soup

A cozy fall favorite loaded with wild rice, sweet potatoes, kale, and mushrooms in a creamy, flavorful broth — pure comfort in a bowl!

6 cups vegetable or chicken stock

1 cup uncooked wild rice (100% wild rice preferred)

8 oz baby bella mushrooms, sliced

4 cloves garlic, minced

2 medium carrots, diced

2 ribs celery, diced

1 large sweet potato (about 1 lb), peeled and diced

1 small white onion, diced

1 bay leaf

1½ tbsp Old Bay seasoning

1 (14 oz) can unsweetened coconut milk or 1 cup heavy cream (for a richer version)

2 handfuls fresh kale, stems removed and chopped

Salt and freshly cracked black pepper, to taste

1️⃣ In a large pot, combine broth, wild rice, mushrooms, garlic, carrots, celery, sweet potato, onion, bay leaf, and Old Bay seasoning. Bring to a boil, then reduce heat and simmer uncovered for 45 minutes or until the rice is tender.

2️⃣ Remove the bay leaf. Stir in the coconut milk (or heavy cream) and chopped kale. Simmer for an additional 5 minutes until the kale is tender.

3️⃣ Taste and season with salt and black pepper as needed.

4️⃣ Serve hot with crusty bread — it thickens slightly as it cools, so add extra broth when reheating if desired.
