Dot Cake Ice Cream Sandwich

This might be the easiest Dot Cake-inspired dessert I’ve made so far.

All I used was a box of ice cream sandwiches and rainbow sprinkles. I cut the ice cream sandwiches into bite sized cubes, then rolled the edges in rainbow sprinkles to give them that colorful Dot Cake look.

The entire process took less than 10 minutes and required zero baking. Taste wise, it still tastes like a classic ice cream sandwich creamy vanilla ice cream between soft chocolate wafers but the sprinkles add a fun crunch and make it feel a little more festive.
