Here is a 🥔 Easy Loaded Potato, Salmon & Garlic Asparagus Meal Prep (3-Day Dinner Plan)
If you're like me and get bored of meal prep real quick, this is the kind of dinner that keeps things tasty without taking forever to make. It’s balanced, flavorful, and comes together with simple ingredients you probably already have. This recipe makes enough for about 3 days and fits perfectly into 2 containers if you're trying to mix it up a bit.
🛒 Ingredients
For the Loaded Baked Potatoes:
6 medium russet potatoes
Olive oil
Salt & pepper
Butter
Mild cheddar cheese, shredded
Sour cream
For the Salmon:
3–4 salmon fillets
Juice of 1 lemon
Salt & pepper
Onion powder
Paprika
Butter Lemon Garlic Sauce:
2 tbsp butter
2–3 cloves garlic, minced
1 tbsp lemon juice
Fresh parsley (or dried works)
Optional: lemon pepper seasoning
For the Asparagus:
1 bunch asparagus, trimmed
Butter
Olive oil
Minced garlic
Salt & pepper
Onion powder
Garlic powder
Paprika
🍽️ Directions
1. Loaded Baked Potatoes 🥔:
Preheat oven or air fryer.
Lightly coat each potato with olive oil, salt, and pepper.
Air fry or bake until tender (air fryer: ~10 mins at 400°F after preheating).
Once cooked, I slice it open and mash slightly inside ( optional ). Add butter, a drizzle of olive oil, mild cheddar, more salt & pepper to taste. Then with sour cream before serving or after reheating.
2. Salmon 🍣:
Prep the Salmon: Rinse the salmon, pat dry, and squeeze lemon juice over it.
Season both sides with salt, pepper, onion powder, and paprika.
Make the Sauce: In a small pan, melt butter with minced garlic I use Olive Oil Butter.
Add lemon juice, chopped parsley, and lemon pepper if using. Let it simmer gently.
Cook the Salmon: Pan-sear or bake the salmon, then spoon the butter sauce over the top when done.
( Optional add lemon pepper seasoning )
3. Asparagus 😋
Steam First: Lightly steam the asparagus in a little water until tender. ( I add butter with the water ) Don't knock it before you try it
Season & Sauté: Drain, then toss in a pan with olive oil and minced garlic. Season with salt, pepper, onion powder, garlic powder, and paprika.
Let it fry until lightly crispy.
Storage & Tips
For 1 person it's about 3 days of meals.
I used 6 potatoes and portioned everything into 2 containers to switch things up and avoid getting bored you can even turn the potato's into mash just add heavy cream and seasoning to taste.
Tastes great reheated just add a splash of water to the salmon if microwaving to keep it juicy.
