Pizza Night
We decided to make our own pizzas for dinner. We did cheat and used frozen pizza but I added red onion, spinach, more mozz and the best ingredient...Ricotta!! Was SOOO good!
Making pizza night special doesn’t always require starting from scratch. I’ve found that enhancing store-bought frozen pizzas with fresh ingredients not only saves time but also adds a personalized, homemade feel to the meal. One of my favorite tricks is layering on extra cheese—mozzarella is great for stretch and melt, but adding a dollop of ricotta brings a rich, creamy texture that balances the acidity of tomato sauce beautifully. To boost flavor and nutrition, I often toss on thinly sliced red onions and fresh spinach. The onions add a hint of sweetness and crunch, while the spinach offers a mild earthy flavor and a healthy dose of vitamins. These toppings complement the savory base and melt perfectly under the cheese. When preparing the pizza, I preheat the oven well to get the crust nice and crispy. After adding the fresh toppings and extra cheese, I bake until the crust edges are golden and the cheese is bubbly. The result is a quick, satisfying meal that's far more exciting than a plain frozen pizza, yet still easy enough for a weeknight dinner. This approach has made my pizza nights a fun way to get creative in the kitchen without spending hours. Plus, it’s a great way to involve family or friends—everyone can add their favorite toppings. If you’re looking to try a nutritious spin on store-bought pizza, I highly recommend giving ricotta and fresh veggies a go. It’s simple, delicious, and reminds me why pizza night is always a favorite!
