These oils are typically high in omega-6 polyunsaturated fatty acids, which, when consumed in excess relative to omega-3 fatty acids, can promote inflammation in the body. Chronic inflammation is linked to a variety of health issues such as heart disease, diabetes, and autoimmune disorders. Furthermore, seed oils undergo extensive processing that often includes chemical extraction, refining, and high-heat treatments. This process can produce harmful trans fats and oxidation products that might damage cells and contribute to oxidative stress. Oxidative stress is a factor in aging and many chronic diseases. Another concern is that seed oils have a high content of linoleic acid, which may lead to the formation of oxidized LDL cholesterol, commonly referred to as "bad cholesterol." Oxidized LDL can accelerate plaque formation in arteries, increasing the risk of cardiovascular disease. Limiting intake of seed oils like soybean, corn, sunflower, and canola oil, and replacing them with healthier fats such as extra virgin olive oil, avocado oil, or fats from nuts, seeds, and fatty fish can help restore a healthier balance of fatty acids in the diet. Additionally, increasing omega-3 intake from sources like flaxseed and fish oil may counteract the inflammatory impact of excess omega-6 fatty acids.
