The key to achieving authentic tandoori bread is in the dough and the baking method. I usually combine all-purpose flour with a bit of yogurt and warm water to enhance the softness and give the bread a slight tanginess reminiscent of traditional recipes. After kneading the dough thoroughly, I let it rise until doubled in size, which usually takes about an hour. Then, I divide the dough into portions and roll them out into oval shapes. For the signature tandoori look and texture, I sprinkle some nigella seeds on top before baking. Though traditionally baked in a tandoor oven, using a hot cast-iron skillet at home works just as well to achieve a similar charred effect. Cooking each piece over high heat for just a few minutes per side gives the bread those beautiful brown spots and a slight crispiness on the edges without drying it out. Pairing the tandoori bread with curries or using it to scoop up dips makes for an incredibly satisfying meal. Baking this bread yourself not only provides fresh, preservative-free options but also allows you to customize flavors by adding herbs or spices to the dough. I highly recommend trying this recipe if you enjoy baking or want to explore Indian-style breads in your kitchen.
