Recipe:
First marinate chicken with some salt, turmeric powder and ginger garlic paste and keep it aside for 30mins.
Heat a pan, add oil. Once the oil is heated add garlic cloves, almonds, walnuts, pinenuts, green chilli, coriander seeds, cumin seeds. Then add mint and coriander, and fry for a minute. Once this mixture cools down, blend it into a fine paste. Now marinate the chicken with this paste for atleast 30mins.
Preheat the oven. Take skewers that are soaked in water for 30mins and add the marinated chicken as shown.
Bake the chicken for 18mins, turning the skewers half way. Then broil for 3mins on high. Note the temperatures might differ to each oven.

Hey everyone! I've been making this baked chicken tikka recipe a lot lately, and I wanted to share some extra tips that have made it even better for me. For anyone looking to truly elevate their chicken tikka experience, these insights might just be what you need. First off, let's talk about marination. While 30 minutes is good for a quick fix, I've found that marinating for a longer period, ideally 4-6 hours or even overnight in the fridge, makes a significant difference. The chicken really gets a chance to soak up all those incredible flavors from the ginger-garlic paste, turmeric, and especially that unique herb-nut blend. The longer it marinates, the more tender and flavorful your chicken tikka will be. Don't rush this step if you have the time – it's worth it! Next, let’s address the spice level, especially with those spicy green chillies. The recipe mentions adding chillies to the paste, and you can absolutely customize this to your preference. If you love a fiery kick, feel free to add an extra green chilli or leave the seeds in. For a milder version, remove the seeds or use fewer chillies. This way, you can achieve that perfect balance of heat without overpowering the other delicate flavors from the mint, coriander, and nuts. It’s all about finding your ideal level of spicy green chilli goodness. Another point is about cooking methods. While baking is super convenient and creates a wonderfully tender chicken tikka, you're not limited to just the oven! I've had fantastic results grilling these skewers on an outdoor grill, which adds a lovely smoky char. Just make sure your grill grates are clean and well-oiled to prevent sticking. An air fryer is also a great option for a quicker, crispier finish. Typically, 15-20 minutes at 375°F (190°C), flipping halfway, works wonders. Whichever method you choose, remember that cooking times can vary, so keep an eye on your chicken to prevent it from drying out. A meat thermometer, aiming for an internal temperature of 165°F (74°C), is your best friend here for perfectly juicy chicken every time. Finally, serving suggestions can really complete the meal. Once your juicy chicken tikka skewers are ready, try wrapping them in warm naan bread with some thinly sliced red onions and a squeeze of fresh lime juice. A cooling side of homemade raita (yogurt dip) or a crisp cucumber and tomato salad pairs beautifully with the spicy flavors. It's also delicious simply served alongside fluffy basmati rice. These little additions turn a simple dish into a complete and satisfying feast. Experiment with what you have on hand and enjoy your delicious, homemade chicken tikka!
