The Only Stew Recipe You Will Need
Seared both sides of the lamb stew meat in beef tallow for 2 min (each side )
generously* Salted the lamb post sear ( tenderise )
Let fully cool
Cut up your holy trinity ( carrots , celery onion ) and get that frying up in the lamb’s released juices & fat
At a 6oz can of tomato paste and fry that with vegetables ( frying the paste helps get rid of bitterness )
Seasoned with 2tspn paprika / 2tspn of cumin / 2 tspn of cayenne & harissa /1 tspn of of garlic powder / 1 tspn cumin
Cover with half beef broth half water
Let cook on medium for 1hr 20 min
stir every 25min to keep from sticking )
add salt,pepper, rosemary & extra garlic after this step and taste
finish this on low heat for 25-30min or until lamb is nice and tender
Served with Parmesan mashed potatoes
