Honey Glazed Salmon Bites

Another 30 minute meal for you. Super easy.

Rice:

2 cups of rice

4 cups of water

1 pinch of salt (or to liking)

1 tbsp butter

Wash the starch off the rice PROPERLY. We don’t like cloudy water over here. To a pot, you’re gonna add the rice, water and salt and stir. Add in the butter then bring to a boil. Once you can see the water going down, put it on low-medium heat and let it simmer while covered. Don’t touch it or stir for around 20 minutes then fluff with a fork.

Salmon:

2 pieces of salmon

Salt

Black pepper

Garlic powder

Onion powder

Paprika

Clean salmon if it still has scales. Cut salmon into bite size pieces. Season with everything listed. Sauté the salmon for around 4 minutes on each side. Then remove from pan. The sauce for the salmon was 2 tbsps butter,1/4 cup lemon juice, minced garlic, 1/2 cup soy sauce and 1/3 cup honey. I added cornstarch slurry (1 tsp cornstarch mixed with 2 tsps water) to instantly thicken the sauce. Bring to a dinner and add the salmon back in. Let it simmer on low heat for 3 minutes then remove from heat.

Asparagus:

Asparagus

Garlic powder

Salt

Pepper

Olive oil

Add olive oil to pan, add asparagus, add seasonings. Toss asparagus in the pan so they’re evenly coated. Cover for 5 minutes then remove from heat.
