Halal Chicken over Rice with White Sauce and Red Sauce:

Ingredients for the Chicken over Rice:

- 1 lb boneless, skinless chicken thighs, cut into bite-sized pieces

- 2 tablespoons olive oil

- 1 teaspoon ground cumin

- 1 teaspoon ground coriander

- 1 teaspoon paprika

- 1 teaspoon garlic powder

- Salt and pepper to taste

- 2 cups cooked basmati rice

- Chopped parsley or cilantro for garnish

Ingredients for the White Sauce:

- 1/2 cup mayonnaise

- 1/2 cup Greek yogurt

- 1 tablespoon lemon juice

- 1 clove garlic, minced

- Salt and pepper to taste

Ingredients for the Red Sauce:

- 1/2 cup plain yogurt

- 1 tablespoon Sriracha sauce

- 1 tablespoon ketchup

- 1 tablespoon lemon juice

- 1/2 teaspoon garlic powder

- Salt and pepper to taste

Instructions:

1. In a bowl, mix the chicken thighs with olive oil, cumin, coriander, paprika, garlic powder, salt, and pepper. Let it marinate for at least 30 minutes.

2. Heat a skillet over medium heat and cook the marinated chicken thighs until fully cooked and browned on all sides.

3. In a separate bowl, mix all the ingredients for the white sauce until smooth and set aside.

4. In another bowl, mix all the ingredients for the red sauce until well combined and set aside.

5. To serve, place a serving of cooked basmati rice on a plate, top with the cooked chicken thighs, drizzle with the white sauce and red sauce, and garnish with chopped parsley or cilantro.

6. Enjoy your delicious halal chicken over rice with white and red sauces!

- 1 cup basmati rice

- 1 3/4 cups water

- 1 tablespoon olive oil
