SUNDAY DINNER 🍽️

Yesterday’s dinner was a bit Jamaican 🇯🇲. I did brown stewed pork, rice and peas, sautéed veggies and sliced avocado.

Ingredients:

- 2 cups of long grain rice

- 1 cup of dried kidney beans

- 1 can of coconut milk

- 2 cloves of garlic, minced

- 1 onion, chopped

- 1 scotch bonnet pepper, whole

- 2 sprigs of thyme

- 1 teaspoon of allspice

- Salt and pepper to taste

- Water

Instructions:

1. Soak the kidney beans in water overnight, or for at least 6 hours. Drain and rinse the beans before using.

2. In a large pot, combine the soaked kidney beans, coconut milk, garlic, onion, scotch bonnet pepper, thyme, allspice, salt, and pepper. Add enough water to cover the beans by about 1 inch.

3. Bring the mixture to a boil, then reduce the heat to low and let it simmer for about 1-1.5 hours, or until the beans are tender.

4. Add the rice to the pot and stir to combine. If needed, add more water to ensure the rice is fully submerged.

5. Cover the pot and let the rice cook for about 20-25 minutes, or until the rice is tender and the liquid has been absorbed.

6. Remove the scotch bonnet pepper and thyme sprigs before serving. Fluff the rice with a fork and enjoy your Jamaican rice and peas!

- 2 lbs of pork ribs, cut into individual pieces

- 1 onion, chopped

- 3 cloves of garlic, minced

- 1 bell pepper, chopped

- 2 tomatoes, chopped

- 2 tablespoons of soy sauce

- 2 tablespoons of ketchup

- 1 tablespoon of brown sugar

- 1 tablespoon of Worcestershire sauce

- 1 teaspoon of dried thyme

- 1 teaspoon of allspice

- Salt and pepper to taste

- 2 cups of water

- 2 tablespoons of browning sauce

- Cooking oil

Instructions:

1. Heat some oil in a large pot over medium heat. Brown the pork ribs on all sides, then remove them from the pot and set aside.

2. In the same pot, sauté the onion, garlic, and bell pepper until they are softened.

3. Add the tomatoes, soy sauce, ketchup, brown sugar, Worcestershire sauce, thyme, allspice, salt, and pepper to the pot. Stir well to combine.

4. Return the pork ribs to the pot and add the water and browning sauce. Bring the mixture to a boil, then reduce the heat to low, cover the pot, and let it simmer for about 1-1.5 hours, or until the pork ribs are tender.

5. Adjust the seasoning as needed and serve the brown stew pork ribs Jamaican style with rice or your favorite side dish. Enjoy!

- 1 cup of shredded carrots

- 1 onion, thinly sliced

- 1 bell pepper, sliced

- 2-3 green onions, chopped

- 2 cloves of garlic, minced

- 1 teaspoon of dried thyme

- Salt and pepper to taste

- Cooking oil

Instructions:

1. Heat some oil in a large skillet or wok over medium heat. Add the sliced onion and bell pepper, and sauté until they are softened.

2. Add the minced garlic and cook for another minute until fragrant.

3. Add the shredded cabbage and chopped bok choy to the skillet. Stir well to combine with the onion and bell pepper mixture.

4. Cook for about 5-7 minutes, or until the cabbage and bok choy have wilted down slightly.

5. Add the shredded carrots, dried thyme, salt, and pepper to the skillet. Stir well to combine all the ingredients.

6. Cook for another 2-3 minutes, or until the vegetables are tender but still slightly crisp.

7. Remove the skillet from heat and stir in the chopped green onions.

8. Serve the sautéed cabbage mixed with bok choy, shredded carrots, thyme, green onions, onions, and bell peppers as a delicious and nutritious side dish. Enjoy!
