Dinner plans just got serious
A full plate of comfort 😍🍽️ Smoky braised meat, creamy mac & cheese, cheesy baked side, and rice & peas with a fresh cucumber tomato salad to balance it all out. 10/10 rich, savory, cheesy, and fresh all in one bite!
Ingredients:
For the braised meat (oxtails or beef):
* 2–3 lbs oxtails or beef pieces
* 2 tbsp oil
* 1 small onion, chopped
* 3 cloves garlic, minced
* 1 bell pepper, chopped
* 2 tbsp browning sauce (optional)
* 1 tsp paprika
* 1 tsp thyme
* 1 tsp allspice
* Salt & pepper to taste
* 2 cups beef broth
* 1 tbsp soy sauce
For rice & peas:
* 2 cups rice
* 1 can kidney beans (drained)
* 1 cup coconut milk
* 1 ½ cups water
* 1 tsp thyme
* 2 cloves garlic
* Salt to taste
For mac & cheese:
* 2 cups elbow macaroni
* 2 cups shredded cheese (cheddar blend)
* 1 cup milk
* 2 tbsp butter
* Salt & pepper
For cheesy baked side (like baked spaghetti or cheesy pasta):
* Cooked pasta
* 1 cup tomato sauce
* 1 cup shredded cheese
* Italian seasoning
For cucumber tomato salad:
* 1 cucumber, chopped
* 1 cup cherry tomatoes, halved
* 2 tbsp olive oil
* 1 tbsp vinegar or lemon juice
* Salt, pepper, dried herbs
Steps:
1. Season & sear meat:
Season meat with spices, salt, and pepper. Sear in oil until browned on all sides.
2. Build flavor:
Add onion, garlic, and bell pepper. Stir until fragrant. Add browning sauce, broth, and soy sauce.
3. Cook low & slow:
Cover and simmer on low for 2.5–3 hours (or pressure cook ~45 minutes) until tender.
4. Make rice & peas:
Add all ingredients to a pot, bring to a boil, then cover and simmer on low for 15–20 minutes until rice is cooked.
5. Prepare mac & cheese:
Cook pasta. Melt butter, add milk and cheese, stir until creamy. Combine with pasta.
6. Make cheesy baked pasta:
Mix cooked pasta with sauce and seasoning, top with cheese, and bake at 375°F for 15–20 minutes.
7. Toss salad:
Mix cucumber, tomatoes, oil, vinegar, and seasoning. Chill before serving.
8. Plate it up:
Serve everything together for a balanced, hearty meal.
