Lazy Girl Healthy Dinner Pt. 2

Instant Pot Cheeseburger Mac (High Protein)

I’m all about meals that feel like comfort food without wrecking my hormones or leaving me bloated.

This recipe is high-protein, super satisfying, and made in one pot—aka my kind of lazy girl dinner.

Here’s exactly how I make it:

Ingredients:

• 1 tablespoon olive oil

• 1 pound 93% lean ground beef

• 1 medium sweet onion, diced

• 1 green bell pepper, diced

• 2 cloves garlic, minced

• 1½ teaspoons paprika

• ½ teaspoon dried oregano

• 3 cups beef stock

• 1 (15-ounce) can tomato sauce

• 12 ounces Barilla Protein+ pasta

• Kosher salt and freshly ground black pepper, to taste

• 1½ cups shredded mild cheddar cheese

• ½ cup heavy cream

• 2 tablespoons chopped fresh parsley (optional)

Instructions:

1. Set a 6-quart Instant Pot to high sauté. Add olive oil and heat until shimmering.

2. Add ground beef and cook until browned, about 3–5 minutes, breaking it apart. Drain excess fat.

3. Stir in onion and bell pepper. Sauté until tender, about 2–3 minutes.

4. Add garlic, paprika, and oregano. Cook until fragrant, about 1 minute.

5. Pour in beef stock, tomato sauce, and pasta. Season with salt and pepper.

6. Secure the lid and seal. Pressure cook on high for 5 minutes.

7. Quick release, then stir in cheddar and cream until melted and creamy.

8. Garnish with parsley (optional) + serve immediately.
