Pineapple Jerk Chicken Bowl with Callaloo Rice

Ingredients

For the Jerk Chicken

* 2 lbs chicken thighs or leg quarters

* 3 tbsp jerk seasoning

* 1 tbsp browning sauce (optional)

* 1 tbsp soy sauce

* 1 tbsp vegetable oil

* 1 tsp garlic powder

* 1 tsp onion powder

* 1 tsp paprika

* Juice of 1 lime

For the Callaloo Rice

* 2 cups cooked jasmine rice

* 1 can callaloo, drained (or fresh chopped callaloo)

* 1 tbsp butter

* 2 cloves garlic, minced

* ½ tsp black pepper

* ½ tsp all-purpose seasoning

Pineapple Salsa

* 1 cup diced pineapple

* ½ red onion, diced

* 1 tomato, diced

* 1 green onion, sliced

* 2 tbsp chopped cilantro

* Juice of ½ lime

* Pinch of salt

Instructions

1. Season chicken with jerk seasoning, soy sauce, browning, oil, garlic powder, onion powder, paprika, and lime juice.

2. Marinate for at least 2 hours, preferably overnight.

3. Grill, air fry, or bake at 400°F until cooked through and slightly charred.

4. For the rice, sauté garlic in butter, add callaloo and seasonings, then fold in cooked rice until heated through.

5. Mix together all pineapple salsa ingredients.

6. Slice the jerk chicken.

7. Fill a hollowed pineapple half with callaloo rice, pineapple salsa, and jerk chicken.

8. Garnish with a lime wedge and serve.
