Like many of you, I used to dread figuring out what to eat every single day. But once I dove into meal prepping, it really became one of my favorite 'me-time' activities – seriously, it's so relaxing!
The biggest pros for me? It saves so much time during the week, reduces decision fatigue, and honestly, it’s a huge budget-saver. Plus, knowing I have healthy, delicious meals ready to go just makes me feel so much better about my health goals for 2024. Yes, it takes a little bit of time upfront, but trust me, it's absolutely worth every minute for the peace of mind and convenience it brings throughout the week.
If you're wondering where to start, here are some of my absolute favorite, super easy meal prep combinations that always earn a 'thumbs up' from me!
1. Classic Chicken, Broccoli, and Rice: This is my absolute staple. I usually bake or grill chicken breasts, steam some fresh broccoli, and cook a big batch of white or brown rice. It's balanced, filling, and so satisfying. You can switch it up with different seasonings like lemon-herb or a little soy-ginger for variety throughout the week!
2. Hearty Chili and Beans: Perfect for colder days or when you want something comforting. I make a big pot of chili with ground turkey or beef and a mix of kidney and black beans. It reheats beautifully and is packed with flavor. Just scoop into containers and you're set! It’s a fantastic way to get a good portion of protein and fiber.
3. Pork and Mac n' Cheese (with a veggie twist!): Who says meal prep can't include comfort food? I love prepping a serving of macaroni and cheese alongside some seasoned ground pork. To keep it balanced, I often add a side of roasted vegetables like green beans, roasted corn, or even some of those delicious roasted mushrooms I sometimes make. It's a fantastic way to enjoy your favorites mindfully, ensuring you get your greens in!
4. Quick Corn and Chicken Bowls: This is super simple for a light lunch. Cooked chicken (shredded or diced) mixed with sweet corn kernels. Sometimes I add a light sauce like a lime vinaigrette or some fresh herbs like cilantro. It’s light yet satisfying, and great for a quick lunch or dinner when you’re short on time.
One thing I've learned that makes meal prepping even more enjoyable (and Instagram-worthy!) is making sure it looks good. Using colorful ingredients like bell peppers, cherry tomatoes, or fresh herbs really makes a difference. And investing in good quality, clear containers, like those glass ones in my photos, makes a huge difference in presentation and keeping food fresh. When my meals look appealing, it definitely makes me feel happy and ready to dig in – almost like a little edible emoji of deliciousness!
My top tip for newbies: Don't try to prep for the entire month on your first go. Start with 2-3 days, or just your lunches for the week. Find recipes you genuinely enjoy eating, and don't be afraid to experiment with seasonings and sauces to keep things exciting. I think in theory it can be an amazing idea. But only if it works out for you and your schedule and if you have the time and money along with if you are going to stick with it. If it doesn’t work for you then there is no point in going through all of that hassle for something you are wasting your time on
