... Read moreOkay, so you saw my super easy lazy dinner with the cucumber and onion salad and garlic bread, right? I wanted to share a bit more about why this simple salad is a total game-changer, especially that 'partially peeled cucumber' hack! When I'm scrambling for a quick meal, this cucumber and onion salad is my absolute go-to. And yes, I always partially peel my cucumbers! Why, you ask? Well, for me, it’s all about the texture. Keeping some of the skin on gives the salad a bit more crunch and bite, which I love. Plus, it adds a lovely visual appeal with those green stripes. Some people also say it helps reduce any bitterness, though I haven't noticed a huge difference myself with English cucumbers. And don't forget the nutrients! Cucumber skin is packed with vitamins and fiber, so why waste it? I usually use a vegetable peeler to just strip off alternating sections, leaving a zebra-stripe pattern. It's super easy and makes the salad feel a little fancier than it is! After I get my cucumbers just right, I move on to the red onion. I usually cut it in half, then thinly slice it to get those delicate rings. I've found that soaking the sliced red onions in cold water for about 10-15 minutes can really mellow out their sharp, pungent flavor, making them much more enjoyable in a fresh salad if you're not a huge raw onion fan. Just drain them well before adding to the cucumbers. For the dressing, you saw I had balsamic vinaigrette and Italian dressing options. Honestly, both are fantastic! Sometimes I just whisk together olive oil, white wine vinegar, a pinch of sugar, salt, and pepper for a super fresh homemade vinaigrette. But when I'm truly in a 'lazy girl' mode, a good store-bought Italian dressing is perfect. Don't forget to season your sliced cucumbers and chopped red onions with a little salt and pepper before adding the dressing – it really brings out their natural flavors. And that garlic bread? Oh my goodness, it’s a must-have with this meal! I love using my air fryer for garlic bread because it gets perfectly crispy on the outside and soft on the inside in just a few minutes. Just slice up a baguette or any rustic bread, spread on some garlic butter (or even just butter mixed with garlic powder and a sprinkle of dried parsley), and pop it in the air fryer at around 350°F (175°C) for 5-7 minutes. Keep an eye on it so it doesn't burn! It’s way faster than heating up a big oven. You might have noticed from the pictures that I often pair this salad and garlic bread with a simple creamy pasta. It makes for such a satisfying and complete meal, still keeping things super easy. Whether it's a quick Alfredo, a simple buttered pasta with parmesan, or a creamy tomato sauce, it just ties everything together. This whole meal comes together so quickly, making it ideal for those nights when you just want something delicious without a lot of fuss.
