perfect egg bites!
no more rubbery, deflated eggs! these healthy, easy, budget-friendly egg bites whip up in no time and can be customized to your liking with whatever mix ins you prefer… what are your fave things to add?—
ingredients:
*eggs (I use 6 for 12 bites)
*1/2 cup cottage cheese
*mix ins of choice (suggested flavor combos below— precook veggies and meats)
*spices: salt, pepper, garlic powder, onion powder, any other seasoning you like
directions:
*preheat your oven to 325 degrees
*place a baking dish with about 1inch of water on the bottom rack while preheating
*blend your cottage cheese to desired consistency— fully blended will result in a smooth, velvety egg bite! But if you like cottage cheese you can leave a little chunky
*stir in spices, probably around 1/2-1tsp each but just measure with your heart
*crack in your eggs, careful not to get any shells in it, and then whisk away. You want to whisk just until it’s fully blended and not streaky, don’t overbeat them since adding too much air will result in wrinkly, deflated bites
*grease your muffin pan
*add your egg mixture to your pan. I use a 1/4 cup and fill each tin and then with the remaining I add a little bit to the ones that look lower. The tins shouldn’t be more than like 2/3 full
*drop in whatever mix ins you chose
*use a fork to gently press in your mix ins. You don’t want to stir, this will incorporate the oil spray you use and may cause them to stick to the pan. We want to just gently push them into the eggs
*tap your pan on the counter a few times to release any air bubbles and then put your pan in the oven
*bake around 20-25 minutes, depending on how your oven heats. You want the egg centers to be slightly jiggly still. You can check by inserting a toothpick to make sure they’re cooked. But they will continue to cook a little once removed from the oven, so if you’re not sure just take them out
*let them cool before removing from the pan and/or refrigerating
To reheat: cover with a paper towel and heat in microwave for about 45 seconds (times vary depending on your microwave)
notes:
*don’t skip the water dish in the oven step!! The water turns into steam in the oven which helps to cook the eggs evenly and prevent air bubbles. If you have a large enough baking dish that your muffin pan fits inside you can do a water bath, just make sure the water isnt too high that it will bubble over into the eggs
*if you aren’t a fan of cottage cheese it’s okay, just blend it completely into what looks like sour cream or yogurt before adding your eggs. You won’t taste the cottage cheese at all this way! But the cottage cheese acts as a binder in the eggs so they’re not dry and spongy, you don’t want to leave it out
*low and slow is best when cooking eggs— rapidly heating causing the expansion/air bubbles which results in wrinkly eggs because they deflate when cooling. If your oven gets really hot and seems to get overcook things then you may want to go a little lower on your temp
*theres tons of flavor combos! Just make sure you pre-cook veggies and meats so they’re don’t release water or grease into your eggs. Suggestions include:
Ham, cheese, peppers and onions
Bacon and cheddar
Chorizo, pepper jack, and red pepper
Spinach, red pepper, and feta
Broccoli and cheddar
Mushroom, peppers, spinach (veggie)
Tomato and Parmesan
