High-Protein Egg Bites Meal Prep
48g of protein in the whole batch—about 7g per egg bite!
Ingredients (makes 12 egg bites):
• 8 large eggs
• 1 cup cottage cheese (2% or full fat)
• 1–1½ cups chopped fresh spinach
• ½ cup shredded cheese (optional – cheddar, mozzarella, or pepper jack)
• ¼ tsp salt
• ¼ tsp black pepper
• ¼ tsp garlic powder
1. Preheat oven to 350°F (175°C). Grease a 12-cup muffin tin or use silicone liners.
2. In a large bowl, whisk eggs until smooth.
3. Stir in cottage cheese, chopped spinach, shredded cheese (if using), and seasonings.
4. Pour evenly into muffin cups – about ¾ full.
5. Bake for 20–25 minutes, or until set and lightly golden on top.
6. Let cool a few minutes before removing. Enjoy warm or refrigerate up to 5 days!
