ADRENAL-FRIENDLY EGG + VEGGIE CASSEROLE

Easy to make. No stress. Perfect for slow mornings or busy weeks.

INGREDIENTS

10 eggs

½ cup cottage cheese (full fat - I love good culture brand)

1 small sweet potato, diced

½ yellow onion, chopped

1 cup zucchini diced

1/2 red pepper diced

1 cup spinach

1 tsp sea salt (Celtic or Redmond’s brand)

1 tsp pepper

½ tsp garlic powder

Sprinkle of italian seasoning

1/2-1 cup of shredded cheese (goat or mozzarella but I found a brand that I loved and used called Laclare organic mozzarella goat cheese)

Olive oil

HOW TO

• Sauté sweet potato + onion in olive oil (5–7 min)

• Add zucchini + red pepper, cook until soft

• Add spinach until wilted

• Whisk eggs, cottage cheese, & seasonings together

• Mix in veggies

• Pour into greased dish

• Top with shredded cheese listed above

• Bake at 375° for 30–35 min
