Granola brioche à la cannelle

Ingrédients secs

3 tasses (270 g) de flocons d’avoine

⅓ tasse (35 g) de farine d’avoine

1 mesure (30 g) de poudre de protéines saveur brioche à la cannelle ou vanille (facultatif)

2 ½ c. à thé de cannelle moulue

½ c. à thé de muscade moulue

½ c. à thé de gingembre moulu (facultatif)

¾ tasse (75 g) de pacanes ou de noix hachées

1 c. à thé de sel de mer

½ c. à thé de bicarbonate de soude

Ingrédients humides

½ tasse (120 ml) d’huile de coco fondue

½ tasse (120 ml) de sirop d’érable ou de miel

⅓ tasse (80 g) de beurre de cajou ou d’amande

1 c. à thé d’extrait de vanille

Ajouts

Dattes hachées (facultatif)

Préparation

Préchauffer le four à 325°F (160°C) et tapisser une plaque de cuisson de papier parchemin.

Dans un grand bol, mélanger les flocons d’avoine, la farine d’avoine, la poudre de protéines, la cannelle, la muscade, le gingembre, les noix, le sel et le bicarbonate de soude.

Dans un autre bol, fouetter ensemble l’huile de coco, le sirop d’érable, le beurre de noix et la vanille jusqu’à obtenir une texture lisse.

Verser le mélange humide sur le mélange sec et bien mélanger.

Presser fermement la préparation en une plaque uniforme sur la plaque de cuisson.

Cuire 20 minutes, tourner la plaque, puis cuire encore 10 à 15 minutes, jusqu’à ce que le granola soit doré.

Laisser refroidir complètement avant de le casser en morceaux. Ajouter les dattes hachées, si désiré.

Optionnel mais fortement recommandé : remettre les morceaux au four 7 à 8 minutes pour un granola encore plus croustillant.

Glaçage au lait de coco

3 c. à soupe de lait de coco entier (utiliser la partie épaisse du dessus de la conserve)

1 c. à soupe de sirop d’érable ou de miel

1 à 2 c. à thé de fécule d’arrow-root ou de maïs (facultatif, pour épaissir légèrement)

½ c. à thé d’extrait de vanille

Faire chauffer doucement dans une petite casserole, en fouettant jusqu’à ce que le mélange soit lisse, brillant et légèrement épaissi.

Laisser refroidir à température ambiante avant de napper le granola.
