muffins façon croissant aux amandes
(sans gluten, mini batch – 6 muffins)
ingrédients
1 œuf
1/4 tasse (60 ml) de lait
1/3 tasse (85 g) de yogourt grec
1/4 tasse (60 ml) d’huile d’olive
1/3 tasse (65 g) de sucre de coco
3/4 c. à thé d’extrait d’amande
3/4 tasse (105 g) de farine tout usage sans gluten (j’aime celle de bob’s red mill)
1/4 tasse (25 g) de farine d’amande
1 c. à soupe (8 g) de fécule de tapioca ou de maïs
3/4 c. à thé de poudre à pâte
1/4 c. à thé de bicarbonate de soude
1/4 c. à thé de sel
tourbillon frangipane
1 c. à soupe (15 g) de beurre ramolli ou d’huile de coco
2 c. à soupe (25 g) de sucre d’érable (ou sucre de coco)
1/4 tasse (25 g) de farine d’amande
1/2 œuf (battre un œuf et en utiliser la moitié)
1/4 c. à thé d’extrait d’amande
garniture
2 c. à soupe d’amandes tranchées
1 c. à thé de sucre d’érable
préparation
préchauffer le four à 400°f (205°c). tapisser ou graisser 6 moules à muffins.
mélanger les ingrédients de la frangipane jusqu’à obtenir une texture lisse et crémeuse. réserver.
dans un bol, fouetter l’œuf, le lait, le yogourt, l’huile d’olive, le sucre et l’extrait d’amande jusqu’à ce que le mélange soit homogène.
dans un autre bol, mélanger la farine sans gluten, la farine d’amande, la fécule, la poudre à pâte, le bicarbonate et le sel.
incorporer les ingrédients secs aux ingrédients humides, sans trop mélanger.
laisser reposer la pâte 10 à 15 minutes.
remplir les moules presque jusqu’au bord. ajouter une petite cuillère de frangipane dans chaque muffin et marbrer délicatement.
garnir d’amandes tranchées et de sucre d’érable.
cuire à 400°f (205°c) pendant 5 minutes, puis réduire à 350°f (175°c) et poursuivre la cuisson 12 à 15 minutes, jusqu’à ce que les muffins soient dorés et cuits au centre.
