... Read moreI recently tried making this sticky date mug cake myself, and it quickly became one of my go-to healthy snacks. Using Medjool dates soaked with a pinch of baking soda really brings out an incredible natural sweetness and moist texture without needing heavy sugar. The combination of vanilla protein powder and oat flour makes it filling while keeping it gluten and dairy free, which is great for sensitive digestion. One tip I found helpful is to adjust the microwaving time based on your microwave’s wattage—start with 60 seconds and add 10 seconds if needed until the edges are set but the center remains tender. I also loved drizzling the optional maple caramel sauce on top, as it adds a lovely touch of richness, but you can skip it to keep the recipe lighter. For those who enjoy experimenting, substituting the coconut sugar with honey or maple syrup works well too, although it changes the texture slightly. Using coconut oil adds a subtle tropical flavor and healthy fats, making it a satisfying treat. Overall, this mug cake is an excellent choice for a quick protein-packed dessert or breakfast that comes together effortlessly. Plus, it’s naturally gluten-free and dairy-free, appealing to many dietary preferences. Definitely a handy recipe to keep bookmarked for busy days or when you need a sweet fix without guilt.
