This Blackstone Cheeseburger Quesadilla is crispy, cheesy, and packed with classic cheeseburger flavor in every bite. Seasoned ground beef, melted cheddar cheese, tangy pickles, and a creamy homemade special sauce are folded inside golden toasted tortillas for a quick and satisfying meal.
Ingredients
For the Quesadillas
1 pound ground beef
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup dill pickles, chopped
4 burrito-size flour tortillas
2 cups shredded cheddar cheese
For the Special Sauce
1/2 cup mayonnaise
2 tablespoons ketchup
2 tablespoons minced pickles
1 tablespoon minced onion
2 teaspoons white vinegar
Directions
Preheat your Blackstone grill or griddle over medium-high heat to about 400°F (200°C).
Add the ground beef to the hot griddle and cook until browned and fully cooked, breaking it apart into crumbles as it cooks. Season with salt and black pepper.
In a small bowl, combine the mayonnaise, ketchup, minced pickles, minced onion, and white vinegar. Stir until smooth and creamy.
Place the tortillas flat on the griddle and warm them slightly for easier folding.
Spread the special sauce over one half of each tortilla.
Top with cooked ground beef, chopped dill pickles, and shredded cheddar cheese.
Fold each tortilla in half over the filling.
Cook for 2–3 minutes per side, or until the tortillas are golden brown and crispy and the cheese is fully melted.
Remove from the griddle and slice into wedges.
Serve warm with extra special sauce, fries, or a fresh side salad.
