I stumbled upon this combination a while back, and it quickly became my absolute favorite breakfast or brunch go-to. It’s not just delicious; it’s surprisingly easy to whip up, even on a busy weekday. First things first, let's talk about the foundation: the sourdough toast. I find that a good, crusty sourdough slice makes all the difference. I usually toast mine until it's golden brown and slightly crisp on the edges, but still a little chewy inside. Don't be afraid to get a nice char on it – that adds so much flavor and texture! I personally love using a wide-slot toaster or even a pan-fry method with a tiny bit of butter for extra crispiness. The robust flavor of good sourdough really holds up to the toppings. Next up, the star of the show: the mashed avocado. I usually use about half a ripe avocado per slice. I like to mash it right on the toast with a fork, adding a pinch of salt, a grind of black pepper, and sometimes a squeeze of fresh lime juice. The lime really brightens up the flavor and helps prevent browning. The key is to get it creamy but still with a little bit of texture – nobody wants a completely smooth paste! Then come the fluffy scrambled eggs. While the toast is doing its thing, I whisk two eggs with a splash of milk or cream, salt, and pepper. I cook them gently over medium-low heat, stirring occasionally, until they're just set and wonderfully soft. What I love most about this meal is its versatility and how satisfying it is.
