... Read moreRoasted garlic tapenade is a versatile and delightful spread that can enhance a variety of dishes. Beyond its base ingredients like Kalamata and Castelvetrano olives, capers, anchovies, and lemon, incorporating fresh parsley adds a bright, herbal note that perfectly balances the savory flavors. When roasting garlic, be sure to use good quality extra virgin olive oil (EVOO) such as Graza to preserve rich flavors and add a smooth finish. The tapenade’s texture can be adjusted according to personal taste—from chunky to smooth—by controlling how long you pulse the mixture in the food processor. Using a quality processor like the Breville ensures even blending without turning the spread into a puree. This tapenade is excellent served on crusty bread, crackers, or as an accompaniment to grilled meats and vegetables, adding Mediterranean charm to your meals. The addition of lemon juice and zest not only brightens the flavors but also helps preserve the spread for longer storage. For those exploring Provencal-inspired cuisine, adding other herbs such as thyme or oregano can complement the existing flavors. To elevate the dish further, try topping with freshly ground black pepper right before serving to maintain a vibrant, spicy bite. This recipe is also perfect for entertaining, offering a luxurious, elegant appetizer that pairs well with fine wines or champagne. Once mastered, you can experiment by adding roasted red peppers or sun-dried tomatoes for new, exciting variations while keeping the foundational elements intact.
