Mini Beef Wellingtons
For the duxelles:
24oz mushroom finely chopped
1 large / 2 small shallot minced
2Tbsp chopped thyme
1/2 cup cognac
Salt & Pepper to taste
For the wellingtons:
Beef tenderloin, sliced and seared as seen
Dijon Mustard
Strips of prosciutto
Egg wash
-Add 1Tbsp oil to a pan, bring to medium heat
-Add shallot and cook while stirring until beginning to brown
-Add mushrooms and continue to cook, season with salt
-Cook while stirring until almost completely dry
-Add cognac, cook until almost dry
-Add thyme leaves, season with pepper and taste for salt
-Once completely dry put into fridge to chill and dry out more
-Assemble Wellingtons as seen
-Bake at 400f with fan or 425f no fan for 8 minutes, rotate and cook 8 more minutes
-Enjoy
