BEEF CORDON BLEU WITH POTATOES MASHED &ROSTED VEGGIES
Beef Cordon
beef steaks (sirloin or top round), pounded thin
4 slices deli ham
1 pack bacon
4 slices proviloom
1 cup all-purpose flour
2 eggs, beaten
1 1/2 cups panko)
2 tablespoon aldobo
1 tablespoon oregano
1 teaspoon garlic powder
1 teaspoon Sazón
2 Salt and black pepper
2 tablespoons butter
Season both sides of the beef with salt, pepper, garlic powder, and paprika.
Place a slice of ham and a slice of Swiss cheese on each steak.
Roll each steak tightly and secure with toothpicks.
Coat each roll in flour, then egg, then breadcrumbs.
Heat the oil and butter in a skillet over medium heat.
Cook the rolls for 5 minutes per side until golden brown. Then transfer to a 350 oven for 10–15 minutes, or until the beef is cooked through and the cheese has melted

4 1/2 tablespoons Dijon mustard
1/3 cup grated Parmesan cheese
2 tablespoons black pepper and salt
In a medium saucepan, melt the butter over medium heat. Add the flour and whisk continuously for about 1 minute to form a smooth rouxSlowly incorporate the milk while whisking until the mixture becomes smooth. Keep cooking for 3 to 5 minutes, allowing the sauce to thicken
Stir in the Dijon mustard, grated Parmesan cheese, salt, and pepper. If needed, add another splash of milk to thin the sauce. Adjust seasonings and Parmesan as needed.
8 potatoes, peeled and cut into chunks

1 zucchini, sliced
1 yellow squash, sliced
2 carrots, peeled and sliced
12 stalks of asparagus
1/2 sweet onion, slices
6 small tomatoes, quartered
2 tablespoons olive oil
1 tablespoon herbs de Provence
1 teaspoon kosher salt
except the tomatoes. Slice the zucchini, squash, carrots and onion into thin julienned pieces. Add the vegetables plus the asparagus to a large bowl and toss with the oil, herbs de Provence.
Line a cooking sheet with aluminum foil and use cooking spray to prevent the vegetables from sticking. Spread the veggies onto the cooking sheet and roast the vegetables for 45 cople of they soften #Recipe #yummy
