Sun-dried tomatoes chicken pasta

This recipe was so delicious and easy!!

Ingredients:

1lb pasta of choice

2 boneless skinless chicken breast

1/2 cup sun-dried tomatoes chopped

2 cups fresh spinach

1 1/3 cup heavy cream

4 garlic cloves minced

1 cup grated Parmesan

Salt

Pepper

Garlic powder

Onion powder

Paprika

olive oil

Directions:

1) put a pot of water on boil for your pasta, while that’s boiling, dice chicken into bite size pieces and add to a bowl. Add a drizzle of olive oil and your seasoning (measure with your heart!) mix and set aside.

2) add pasta to boiling water and cook for recommended time on box. While pasta is cooking place a pan on medium heat and add chicken. Cook until browned and fully cooked on inside. Remove from pan and place to the side. Once pasta is done drain and set aside.

3) to the pan that you cooked your chicken in, on medium heat add your minced garlic and your sun dried tomatoes. Let cook for about a minute. Add spinach and let wilt.

4) once spinach is wilted add your heavy cream and bring to a simmer, put heat on low and add Parmesan cheese slowly mixing as you go until all cheese is incorporated and sauce is smooth.

5) add pasta and chicken to sauce and mix. Season with salt and pepper. Taste and add more seasonings if need be. Serve and enjoy!

Tip! If sauce is too thick add more heavy cream!
