Protein peanut butter eggs 🥜🍫

Ingredients:

• 3/4 cup smooth peanut butter

• 2 scoops vanilla protein powder (I used Garden of Life Organic Vanilla Protein)

• 3/4 cup dark chocolate chips (I used Lily’s dark chocolate)

• 1 Tbsp coconut oil

How to make:

1. Mix peanut butter + protein powder until it forms a dough

2. Roll into little egg shapes + place on parchment paper

3. Freeze for at least 2 hours

4. Melt chocolate + coconut oil (microwave ~30 sec, then stir until smooth)

5. Dip each egg + drizzle extra chocolate on top

6. Freeze again until fully set

High protein, minimal ingredients, and the perfect sweet treat to keep in your freezer 🤍

... Read moreMaking these high-protein peanut butter chocolate eggs at home is a fantastic way to enjoy a nutritious yet indulgent treat without compromising your dietary goals. From personal experience, using high-quality ingredients such as organic vanilla protein powder and sugar-free dark chocolate significantly enhances the flavor and nutritional profile of this snack. When rolling the dough into egg shapes, I found that chilling the mixture briefly before shaping helps prevent it from sticking to your hands. Freezing the eggs before dipping in melted chocolate is crucial to achieve a smooth coating without melting the peanut butter filling. For an extra twist, you can experiment by adding a pinch of sea salt to the peanut butter mixture or sprinkling a little crushed nuts on top after dipping. These variations add a pleasant texture and elevate the chocolate's richness. Storing these protein peanut butter eggs in your freezer means you always have a quick, satisfying snack option ready to enjoy. They are perfect post-workout treats or a guilt-free dessert alternative that keeps well for weeks. Remember to choose protein powders and chocolate brands that align with your dietary needs—whether it's organic, plant-based, or low-sugar—to tailor this recipe perfectly to your lifestyle.
