To recreate this magic, you'll need: Your favorite pasta (I love using a medium shape like rigatoni or penne) 1-2 medium fresh beets 1 head of garlic, roasted Fresh rosemary (a few sprigs) Good quality olive oil Juice of one lime 2-3 tablespoons pomegranate molasses (divided) Fresh basil for garnish Salt and freshly ground black pepper to taste For the Pomegranate Chicken: 2 boneless, skinless chicken breasts or thighs, additional pomegranate molasses for baking. First, let's get that gorgeous pink hue for the pasta! Peel and quarter your beets, then boil them in about 4-5 cups of water until they are fork-tender.
